Great Barbeque Sauce Recipes?

Last year I bought myself a pressure cooker in order to do "Lazy Man's Ribs".  You pressure cook some ribs for 20 minuts or so, then you stick 'em on the grill and cook on the barbeque sauce.  It works great, and the ribs turn out pretty good usually.

One thing I've found pretty easy to make is Jamaican Pulled Chicken.  Basically, I buy up some boneless, skinless thighs and breasts and pressure cook them for a half hour, drain the juice and put the chicken into a bowl where I mash it up good (the meat is usually falling apart by now anyway).  Then I mix in a jerk marinade made from the recipe on the side of McCormick Carribean Jerk Seasoning.  The recipe involves cider vinegar, soy sauce, and olive oil.  Then I throw the stuff into the crock pot to soak in for a few hours.  It's awesome.

Well, I'm a big fan of "Barbeque" too.  North Carolina Barbeque.  Specifically, eastern north carolina barbeque.  Down here, for those of you out of town, "barbeque" is not a verb (as in "I'm going to barbeque some ribs") or an adjective (as in "I'll have the barbequed chicken please").  It odes not mean some kind of meant basted in some kind of reddish/brown sauce that you buy in the store.

No, it's a noun, referring to pulled pork shoulder that has cooked for a half a day) and soaked in a thin, spicy sauce, made largely of cider vinegar and other ingredients.

I've decided that I need to try to make some of this, but of course I'm too lazy to cook up a pig for a half day, so I'm gonna do the pressure cooked chicken, and try a few sauce recipes.  Here is the first one:

INGREDIENTS
2 quarts cider vinegar
1/4 cup salt
2 tablespoons cayenne pepper
3 tablespoons red pepper flakes
1 cup light brown sugar
1 tablespoon hot pepper sauce

DIRECTIONS
In a large bowl, mix together cider vinegar, salt, cayenne pepper, red pepper flakes, light brown sugar, and hot pepper sauce. Stir until salt and brown sugar have dissolved. Cover, and let stand at least 3 hours before using as a basting sauce or serving on meat.

Well, I'm gonna give this a whirl tomorrow, and I'll update y'all right here.

UPDATE: 8/1/05: Well, I used the above recipe yesterday, and it turned out not bad.  I didn't actually have red pepper flakes, so I used a mesquite grill seasoning instead which had red pepper in it.  I think the end result was not spicy enough, and was therefore a little too sweet, but it was not bad.  Worth trying again - with red pepper flakes of course.
